Healthy Fruit and Nut Smoothie

Are you someone who prioritizes a morning workout over spending time preparing breakfast? Here is a lightning-fast, healthy yet delicious smoothie loaded with nuts, fruits, and veggies to keep you fueled up. And the best part? You can totally meal prep in advance, so mornings become a breeze!



On most mornings, as the sun begins to peek through my window, I kickstart my day with a ritual that sets the tone for what lies ahead. Before anything else, I hydrate with a refreshing liter of water, then, I eagerly make my way downstairs to my yoga mat, relishing in this sacred time dedicated solely to myself. With each stretch and breath, I feel a sense of renewal wash over me, readying me for the day. Before I even hit the mat, I've already prepared my smoothie, ensuring I won't feel rushed later.


I've always wanted to make nuts a daily staple, but munching on them individually felt like a chore, and I often forgot. Then, one day, it hit me – why not blend them into a smoothie? And so, this nutrient-packed concoction was born, brimming with the goodness of soaked nuts, from almonds to walnuts, pumpkin seeds to sunflower seeds, chia seeds to flax seeds to raisins, dates to figs, and dried cranberries, each sip brims with a powerhouse of nutrients. What's more, soaking them enhances their nutritional value, making this smoothie an even more wholesome choice. This smoothie boasts not only nuts, but also veggies, making it even healthier. The natural sweetness from carrots, beets, apples, dates, and raisins imparts a sweet taste to the blend, making additional sweeteners like honey unnecessary.


You can also meal prep this smoothie, making it perfect for preparing ahead for the week. Simply take five bowls, scoop out the ingredients, and add them into the bowls. Close the lids and store them on the counter. Then, just the night before, add a cup of water to one of the bowls, and wake up to a bowl full of goodness, ready to blend!


So, what's not to love about this enchanting purple smoothie? It's healthy, it's quick, it's meal preppable, it's quick to have, and my oh my, it's oh-so-pretty!




BREAKFAST SMOOTHIE


Serves 1

Prep and cook time 5 min


INGREDIENTS


For soaking overnight:

8 almonds

6 walnuts

1 tbsp pumpkin seeds

1 tbsp chia seeds

1 tbsp flax seeds, ground

1 tbsp raisins

2 dates (seeds removed)

1 fig (optional)

1 tbsp sun flower seeds (optional)

1 tbsp dried cranberries (optional)

1 cup water


For smoothie:

1/2 apple

1/4 beet (medium sized)

1/4 carrot or 4 baby carrots

1/2 cup milk

1/4 tsp cardamom, ground (optional)


INSTRUCTIONS


  1. Combine all the ingredients listed under 'for soaking overnight' in a bowl with a lid. Cover them with water and let them soak overnight.


  2. You can meal prep this easily. For meal prepping, just distribute the nuts and dates mix into five bowls. Then, the night before, pour water into a bowl to make it ready for the morning.

  3. In the morning, transfer the soaked contents (including any remaining liquid) into a blender. Add milk, vegetables, and apple. Blend until smooth.

  4. Pour into a glass

  5. And enjoy this yummy, quick breakfast smoothie!
